We aren't here to count calories, we're here to eat what God gave us and thrive in it.

Day: 10 YOU DID IT!!! 

I'm SO proud of you!!!! Make sure the 1st thing you do today is THANK GOD for keeping you focused! I truly hope you stay with this!!! I'm sure you have noticed some MAJOR changes since you started less than 2 weeks ago! Lent begins today!!! PUSH FORWARD!!! another month and this will become a habit for you!!!! many blessings on your journey and i will be posting a Weeble meet up for THIS WEEKEND to go over your next steps and answer any questions and pray with you!! 

Spicy Indian Curry Lentils

1/4 cup EVOO
1/4 cup of chopped red onions
2 large garlic cloves chopped

2 large tomatoes pureed
1/2 cup of water

(Let boil)

In a seperate pan boil 3/4 cup of lentils

2tbsp Yellow Curry Powder
1 tbsp cayenne powder
3 tbsp real salt
1/4 tbsp Turmeric
1 1/2 tbsp chili powder
1 tbsp black pepper

Add dry ingredients to boiling sauce.
Add lentils to boiling sauce.

Boil 1 cup quinoa.

SERVE. =)
Squeeze 1/2 lemon on top as desired.

Day: 9 .. ONE MORE DAY

Praise GOD! You are almost there! How are you feeling? Have you been asking for strength and focus? Is it getting any easier? What are some of your favorite foods right now? I cannot express to you how EXHAUSTED i am as i type this blog for you, while eating the salad recipe i'm about to post... a LONG 15 hours day has just come to a close and I just walked in the door, made this delicious recipe and began to type. I hope you'll enjoy it, and know that if you are feeling torn and exhausted... YOU ARE NOT ALONE. Stay FOCUSED. God will give you strength to do it all. He will. Ask Him.

Need a quick recipe? 
Look no Further, Quinoa Salad.

1/2 cup cooked Quinoa

roughly chop:

Cucumber

Cherry Tomato

Scallions

broccoli

Radish

Avocado


Add to room temperature quinoa.

Mix.


Add Lemon Garlic-Herb Dressing 

( From Day 2 Post)

Mix well. Add Rosemary (Fresh) as additional dressing flavor. 

** You may add Beans, Nuts, ANY Additional veggies. 

*** You may also add any additional herbs! Get creative! 



Day: 8 Hi Monday! 

You are exactly where you are supposed to be in this moment! Congratulations for staying focused! there are many doing this with you, including me =)

Have you been asking God for strength daily? Keep asking! He hears you, but do you HEAR HIM? Are you listening after you pray? DO IT! we have 2 days left! I hope you prepped your #FreshFaceShake for today! You can do this! 


For those "sweet toothers" out there... this next one is for you =) 

Date Pops! 

In a food processor:


About 5-7 Medjool Dates

1/4 cup walnuts

1 tbsp Chia Seeds

2 tbsp Shredded coconut


Process together until mixed well.


Remove this "batter" place into mini-cups.

Add lollipop stick. Pop in freezer for 20 min.

 

Enjoy your Date-Pop =) 

Day: 7 Happy Sunday! 

Wake up today feeling GRATEFUL!!! You made it to the 7th day! it's been ONE WEEK! I bet you feel amazing! What are the changes you are noticing?  How much closer are you to God? Your skin cleared up? Your attitude has been better? Anxiety going away? Mental Clarity? Head aches are gone? Maybe you lost a pound or two, or five? haha, Well, whatever it is, all i know is ONE WEEK IS AN ACHIEVEMENT!!! Be happy and grateful in it! 


Make your way to Church this morning JUST TO THANK HIM!!! Make sure you ask Him for continued FOCUS as your journey continues! God is so great! Ask Him for forgiveness where you have fallen short and do better in the future! 

Remember, no cheating today! That's why i have such an amazing feast planned for you to keep you focused! 


WE WILL BE HAVING A MEET UP, at SOME point this week, STAY ON THE LOOK OUT FOR THAT! 

Tabouli & Spicy Hummus!  (aka My FAVORITE MEAL) 

Tabouli: (feeds 2 people)


2 bundles of parsley 

3 Roma Tomatoes 

3 Scallions

1/2 Large Green Bell Pepper

1 tbsp Dried or Fresh mint Leaves

1/4 cup Crushed Bulgar Wheat

1/4 Cup Lemon Juice

2 tbsp Olive Oil 


Chop all veggies and add to large bowl. Add Lemon, Olive Oil and Bulgar to the bowl. Add 1TBSP Real Salt (If you are NOT using this brand of salt, the salt ratio will be different)

1/2 TBSP Black Pepper. Taste, adjust lemon, oil, and salt to taste! Enjoy!~!!


Hummus:

1/2 Cup  strained Garbanzo Beans

1/4 Cup Sesame Oil (Tahini)

1/4 cup lemon juice

3 garlic cloves

1 tbsp salt

1 tbsp black pepper

1/4 tbsp chili powder

1/2 tbsp cayenne powder

small handful fresh cilantro


add all ingredients into food processor, blend until creamy and smooth. It should be somewhat of a "doughy" texture. (spices can be added or subtracted to taste) 


Boil Quinoa (How - To BELOW, on Day 2)


Add all three to a plate and serve! May eat with Cabbage or Lettuce leaves as 'bread' replacement. SO BOMB! Enjoy! 

Day:6 Over-the-HUMP.

NO DAYS OFF... =) I know it's saturday, BUT i bet you're ALREADY noticing HUGE differences! AMEN! Remember to be GRATEFUL! wake up excited to start a new Purpose -filled day!!! 

Vegan- Caprese Salad 

I LOVE this recipe after a long day at work, or a long week! 


1- Large Avocado

1 Roma Tomato

1 cucumber

5-7 Basil Leaves


Slice all veggies and layer on top of each other,

use WHOLE Basil leaves, or slice them for a pretyy garnish and AMAZING burst of flavor. 


Spice with Real Salt, Pepper, garlic powder and a squeeze of lemon and Olive Oil.

Done =)

A Sweet Treat:


Freeze 1 LARGE banana (VERY RIPE)


In a food processor, add frozen banana, 1/4 tbsp Organic Vanilla Bean powder, Coconut shavings.


Process until creamy.


Scoop into small bit-sized cups, add blue berries, strawberries and walnuts. 


YUM!!! Enjoy! You deserve it!

Day: 4 Press FORWARD!!! 

We're ALMOST 1/2 way THERE!!!! How are you feeling? I see all of your posts on IG! Great job!!! Continue to ask God for guidance, focus and joy in what you are doing!!!! I see that your prayers are keeping you away from bad food, making you stronger to resist temptation, helping your families become supportive and want to be on board!!! THESE THINGS ARE AMAZING GRACE! God gives you little nudges to help you along!!!! Don't be disheartened if you don't see all of these things right away or any of these things right away, they will come. What you do see right now... is a BRIGHT FUTURE! Clarity of soul, body and mind. You are on a FAST. AN AMAZING fast with a journey tied to it... the string is held by God. Let Him pull and push you.. daily. 

Slice Yams into 'fries' ( one yam per person)

Place on baking sheet tossed in Olive oil, Real Salt and Garlic Powder. Place in oven at 450 degrees, cook until golden brown. (15-20 minutes or so.)


in a bowl mix Real Salt, Cayenne Pepper, Black Pepper, Garlic Powder, 1tbsp olive oil.

Add 1 cup Kidney beans (for about 3 yams, make more or less depending on how many are eating)

Mix together.


After yams have browned, add kidney beans on top, put back in oven under the BROILER. (5minutes)



Remove baking tray and add your FAVORITE toppings!!! Here's what i do: 


Make Pico De Gallo, Guacamole (See Chipotle Burrito Bowl Recipe) chop some radishes and lettuce and layer on top of Yams/Beans ON THE TRAY! So fun and festive. LESS clean up, grab some paper plates and let the whole family dig in! This dish is a CROWD PLEASER! 



DAY: 3 You CAN do this!! 

This is the day when FAITH REALLY steps into play! This is the day you find out how badly you want this and how much YOU TRUST GOD TO HELP YOU GET THERE!!!! Don't you disappoint HIM. This has nothing to do with you, your family or friends... it's all about making GOD happy by becoming the best version of you that there is. This diet is like a FAST. It is here to show you His love for you. When you have physical clarity, you can have mental clarity and that allows for spiritual clarity... SO TRUST HIM.

DAY: 2 How do you feel? 

The most important thing during these 10 days, is your FAITH. If you have been sticking to the program, NO sugar, NO Meat, NO processed foods etc.. you may be feeling the effects already! STAY FOCUSED. Some of you may have headaches... DEPENDING on how much sugar your body normally receives, i understand and feel your pain. DRINK LOTS OF WATER. Eat a date or some other pieces of fruit and the headache will subside. Keep praying and asking God to keep you focused. He will. Don't cave for ANY cravings. YOU CAN DO IT. MAKE THIS TIME THE LAST TIME.

I was asked today "How do you cook quinoa?"


SIMPLE: 1 part Quinoa, 2 parts water.

For example: 1 cup Quinoa, 2 cups water.

Let it boil, all the water will be absorbed and they will be puffy and fluffy ( like couscous, or rice) and then... let it cool a bit.. and BAM! done son. 

Let's talk Salads...

Lemon-Garlic Herb

                D R E S S I N G.

Mash 2 cloves garlic

1 tbsp Real Salt

add 1/3 cup Olive Oil

Lemon Juice (1-2 Lemons)

Stir. Enjoy. 


*** This dressing is the BASE for any future dressing. You can now add oregano, basil, mint etc. to this dressing to change the taste. 


Make SALADS! They are the CHEAPEST, most nutritious meal you can have!!!! I have one at lunch AND dinner!!!! Remember this: 70-80% Veggies, 20% everything else. It helps keep your PLATE in perspective!!!

Salad:
Kale
Garbanzo Beans
Tomato 
Beets ( Or Kohlrabi) 
Bell Peppers(Any color, Sweet is best)




1 cup (already cooked) Garbanzo beans added to warm pan with 1 tbsp olive oil. Cook for 2 min, add Real Salt, Garlic Powder and Cayenne Powder (to taste).

Cut all veggies, add to bowl, pour Garbanzo Beans and Lemon-garlic-Herb dressing on top. EAT. LIVE. ENJOY!!! Share with friends... omg. SO BOMB.

DAY : 1 HELLO MONDAY!

Day 1, Hello Monday!!!


Dear Lord,

 I pray that as I embark on this new journey in faith, that you hold my hand, and show me that through you i will not fail. You are the reason i am able to start anew. Thank you for your help! I know with you, I can conquer my fears and doubts. I pray that the negative words of others are silenced and all i hear is positive words of encouragement as i journey on the next 10 days! Thank you for being my light, my Lord and my LIFE. AMEN.




A bit about me: 

"Use It All" Stir Fry! ( Literally, use all the veggies you have in the fridge!) 

Olive Oil

Garlic Cloves (3) 

Coconut Aminos

Cooked Quinoa

Cilantro

Slivered almonds

Sesame Seeds

Ginger Powder

Turmeric Powder

Cayenne Powder

Real Salt

Pepper

Zucchini

Bell Peppers (Red/Green/Yellow)

Mushrooms

Cabbage(Green/White)

Red Onion x Scallions

Carrots 


How to Prepare:

 Chop all veggies into bit sized pieces

 (All different shapes, being vegan means TEXTURE is important)

heat pan, add 1-2 tablespoons of olive oil (depending on size of pan/ how much you're making)

add about half of a red onion to the pan with 1tbsp Real Salt, let caramelize. 

add mushrooms, bell peppers, scallions, carrots and lastly cabbage. 

(give each veggie to opportunity to cook for a few minutes before adding the next)


Smash 3 garlic cloves with a pinch of salt, or finely chop garlic cloves.

In a bowl: add garlic cloves, 1/4 cup of coconut aminos, Real salt (to taste), black pepper, cayenne pepper, turmeric and ginger powder(to taste, some like it spicier than others) 


Pour sauce over veggies in pan, let heat. 

Roughly chop cilantro. 

Add cilantro, slivered almonds to pan... turn fire off, let sit for few minutes.


Serve on a dish with Quinoa! add sesame seeds on top and a squirt of lime if you'd like. 

(feeds 2-3 people comfortably)
